Ragi Adai

Ragi (finger millet) is an excellent source of calcium for bone health, and drumstick (moringa) leaves are rich in protein, vitamins, calcium, folate and iron — a true superfood pairing from Tamil kitchens.

Ragi Adai

Ingredients

  • Ragi flour – 1.5 cup
  • Big onion – 2 nos, finely chopped
  • Drumstick leaves – 1 cup
  • Capsicum – ½ cup, finely chopped
  • Coconut – ½ cup, grated
  • Ginger, grated – 1 tsp (optional)
  • Curry leaves – few, finely chopped
  • Chilli powder – 1 tbsp
  • Green chillies – as required
  • Salt – as required

Instructions

  1. Add ragi flour, salt, chilli powder, curry leaves, garlic, coconut, onion, drumstick leaves, gingelly oil, capsicum and water in a bowl; mix into a thick batter.
  2. Take your cast iron dosa tawa and apply seasoning — ready to cook. You can use butter paper to make shapes.
  3. Spread the batter in the shape of a dosa and add gingelly oil along the edges.
  4. Flip it back and forth till the batter is nicely cooked.
  5. Serve with jaggery powder, pickle or any chutney.
