Ragi Adai
Ragi (finger millet) is an excellent source of calcium for bone health, and drumstick (moringa) leaves are rich in protein, vitamins, calcium, folate and iron — a true superfood pairing from Tamil kitchens.

Ingredients
- Ragi flour – 1.5 cup
- Big onion – 2 nos, finely chopped
- Drumstick leaves – 1 cup
- Capsicum – ½ cup, finely chopped
- Coconut – ½ cup, grated
- Ginger, grated – 1 tsp (optional)
- Curry leaves – few, finely chopped
- Chilli powder – 1 tbsp
- Green chillies – as required
- Salt – as required
Instructions
- Add ragi flour, salt, chilli powder, curry leaves, garlic, coconut, onion, drumstick leaves, gingelly oil, capsicum and water in a bowl; mix into a thick batter.
- Take your cast iron dosa tawa and apply seasoning — ready to cook. You can use butter paper to make shapes.
- Spread the batter in the shape of a dosa and add gingelly oil along the edges.
- Flip it back and forth till the batter is nicely cooked.
- Serve with jaggery powder, pickle or any chutney.
